The actual route is difficult to plan, if I want to take in both Copenhagen and Florence, as they are two extremes in terms of the continent. And everyone I speak to suggests somewhere different. The problem with doing such a large area is that you will only pay lip service to each destination. But what I could do, for example, is:
London - Brussels - Amsterdam - Hamburg - Copenhagen - Berlin - Prague - Vienna - Munich - Bern - Turin - Florence
That's 11 destinations, although I might want to spend a couple of days in the Swiss / Italian border regions as there are some nice tourist railways there.
Sleeper trains make a lot of sense and are economical compared to a day train and a hotel, plus you have the day free to explore. The flip side is that the train is an excellent way to see the sights.
So I think we will call this Option 1 for now..
